Regarding this, how do you keep beer from going flat?
If you have beer left in a screw-top (i.e. twist-off) glass beer bottle, immediately screw the cap back on as tightly as possible. Place in the refrigerator UPSIDE-DOWN. The pressure won't escape because the cap now only has to be liquid-tight, not air-tight. It should stay fizzy for at least a week upside-down.
Also, is it OK to drink flat beer? Beer doesn't become unsafe to drink as it matures, but it will begin to taste flat — either because it loses flavor or develops an off-putting flavor profile. Its proteins will still break down, just as with any other beer, but it will have been engineered to withstand the process in the first place.
Then, why is my beer flat?
The two most common issues resulting in flat beer are: Not giving the beer enough time in the bottles (we suggest a minimum of 2 weeks) or not using enough pricing sugar in your beer. Either the yeast for whatever reason did not eat up all the sugar you added, or your bottles are allowing some CO2 to escape.
How do you rejuvenate beer glasses?
Do a salt water scrub on all of the glasses, inside. It's easy. Just wet each glass and sprinkle with salt. Then use your hand and "scour" each glass throughout the inside to the rim, and rinse well.
